Like so many natural resources in the so-called “New World,” European scientists extracted indigenous plants and ancestral knowledge from the Americas, rebranding and co-opting them for profit and prestige. For another such story, see my essay on sunflowers.

Interesting history connecting sassafras and root beer. Hires was a familiar name. Didn't know it was from that far back! I especially like the conversation Quark has comparing a taste you don't like at first but grows on you.
